KALE + MUSHROOM PANINI

A kale, gourmet mushroom, onion, and smoked gouda cheese melt.

 

I N G R E D I E N T S

  • 1/2 onion, sliced into 1/4 inch pieces

  • Olive oil

  • 6 oz. Gourmet Mushroom Mix from Happy Mountain Mushrooms (or other mushroom of choice), sliced into bite sized pieces

  • 1 clove garlic, minced

  • Salt

  • Black pepper

  • 1 kale top, stripped from the stem and chopped into bite sized pieces

  • 4 slices bread from The Grain Shed

  • 4 slices smoked gouda cheese from Brush Creek Creamery (or other cheese of choice)

 

P R O C E S S

  1. Prepare the onion, mushrooms, and kale.

  2. Heat a skillet to medium heat on the stovetop. Saute the onion with olive oil until translucent, about 4 minutes.

  3. Add the mushrooms and garlic and sprinkle with salt and pepper. Saute for another 10 minutes until mushrooms are cooked through and their juices have evaporated.

  4. Add the kale to the mix, cooking until tender, about 4 minutes. Remove from heat and place in a bowl.

  5. Place two pieces of bread flat in the skillet on medium-low heat. Layer with smoked gouda and kale mix.

  6. Top with the two additional pieces of bread. Cover the pan.

  7. Check the bread touching the skillet often. When the bottom is golden brown, flip to toast the other side. Cover in-between to help the cheese get all melty.

  8. Remove, cut in half or quarters, and enjoy!
