INW CHERRY ROLL-UPS
Enjoy this treat from your childhood but with organic, Inland Northwest grown cherries from OPMA! These are a great snack to bring on a hike, store in the office, or have on hand for the kiddos!
I N G R E D I E N T S
3 POUNDS sweet red or Rainier cherries, roughly 2 cups when pitted
1/8 CUP water
1/6 CUP sugar (or honey)
P R O C E S S
ONE
Remove the cherry pits by slicing the cherries in half and cutting around the pit (this is a lot easier if you have a cherry pitter!).
TWO
Add the cherries to pot with water and sugar. Bring to a simmer.
THREE
Simmer until the cherries become tender/soft and the juices have thickened slightly, roughly 30-40 minutes.
FOUR
Preheat the oven to 175 F. Using a immersion blender, food processor, or standing blender, blend the cherry mixture until smooth. Cover the surface of a baking sheet with a piece of parchment paper. Pour the cherry mixture over the parchment paper, using a spatula to form it into a rough, evenly spread rectangle. Bake for 5 hours until it has a tacky texture.
FIVE
Remove from oven and let cool for 5 minutes. Cut or tear away the extra parchment paper around the edges. Roll the parchment and the cherry fruit leather along the long edge. Slice into 12 pieces, about 1 in thick. Store in a tupperware or sealed bag for 4+ weeks.
