COCONUT CREAMED SPINACH

I N G R E D I E N T S

  • 1/2 yellow onion, sliced finely

  • 1 TBSP olive oil

  • 1 clove garlic, minced

  • 1 POUND mushrooms or protein of choice

  • 4 SHAKES cayenne pepper from Hayshaker Farm

  • 1 CAN coconut milk

  • 1/4 POUND spinach, chopped or torn into bite sized pieces

  • Salt and pepper to taste

PROCESS

  1. Prepare the veggies.

  2. On medium heat, sauté onions until translucent. Add the mushrooms and garlic, stirring occasionally about 10 minutes.

  3. Add the cayenne pepper (or red pepper flakes) and coconut milk. Cook covered on low for 10 minutes.

  4. Stir in the spinach, cooking until wilted.

  5. Add salt and pepper to taste. Serve with white rice or wild rice. Enjoy!
