CRISPY POTATOES
I N G R E D I E N T S
1 POUND potatoes
1 TSP salt
2 TBSP vinegar
1 TBSP olive oil
Salt and pepper to taste
PROCESS
Peel and dice the potatoes into half-inch pieces.
Bring water, salt, and vinegar to a boil. Add the potatoes and boil for 6-8 minutes. Remove and drain.
Heat a cast iron skillet to medium-high heat with olive oil. Add the potatoes and let sit for 5 minutes without stirring. Then stir and let sit for another 5 minutes so another side of the potatoes gets crispy.
Sprinkle with salt and pepper to taste. Enjoy!
