DELICATA PARMESAN PASTA w/ BUTTERED MUSHROOMS

Serves 3-4

 

I N G R E D I E N T S

  • 1 LB pasta

  • 1 TBSP olive oil

  • 1/4 large yellow onion from Channing Farm, diced

  • 1 delicata squash from Big Sage Organics, chopped into ½ inch pieces

  • 2 cloves garlic from Royal Produce, minced

  • 1 on the vine tomato or ½ can of diced tomatoes (optional)

  • 6 oz mushrooms from Happy Mountain Mushrooms

  • 2 TBSP butter

  • 1 TBSP heavy cream

  • Fresh parmesan cheese

  • Salt and pepper to taste

P R O C E S S

  1. Prepare the pasta according to package instructions. Save 1 CUP pasta water.

  2. In a saucepan, saute onion with olive oil until translucent. Add the delicata squash and cook, stirring occasionally until tender. Add garlic and optional tomatoes, cooking another 2 minutes. Add pasta water and blend using an immersion blender. Simmer for an additional 5-10 minutes, adding cream and more water as needed. Season with salt and pepper.

  3. Meanwhile in a separate pan, saute mushrooms in butter until juices have evaporated. Season with salt and pepper.

  4. Combine pasta with delicata sauce and grated parmesan cheese until evenly coated.

  5. Serve pasta topped with additional parmesan and buttered mushrooms. Enjoy!
