GARLIC SCAPE BUTTER

Makes 1 stick/log of butter

Garlic scapes are in season!! Make this special, beautiful compound butter for a dinner party show-stopper or for daily use. Try different herbs like basil, chives, or thyme. We love bringing this over to a friend's house with a fresh loaf of Grain Shed bread!

 

I N G R E D I E N T S

  • 1/2 cup heavy cream (or 1 stick of butter)

  • 2 garlic scapes

  • 1 tbsp parsley

  • 3-5 edible flowers like nasturtium

P R O C E S S

ONE
Make the butter (omit this step if you are starting with a stick of butter):
Add the heavy cream to an electric mixer. Using the whisk attachment, beat on medium-high until the cream separates into globs of butter and liquid buttermilk, 3-5 minutes. Strain out the liquid using a fine strainer or cheese cloth. Place the buttere in a bowl and save the buttermilk for Sunday morning pancakes!

TWO
Chop and mix in the herbs:
Thinly slice the garlic scape and mince the parsley. Using a spoon, mix the herbs into the butter.

THREE
Form the butter:
Place the butter mixture onto a sheet of parchment paper. Using the parchment paper as your aide, form the butter into a log and pat the ends flat.

FOUR
Roll and chill:
Gently but firmly press the edible flowers onto the butter. Snuggly, roll the parchment paper around the butter and twist the ends. Store in the fridge 2-3 weeks or until use. Enjoy!!
