GOLDEN BEET AND FETA PIZZA

INGREDIENTS
PIZZA DOUGH
1 CUP all-purpose local flour from the LINC Market
1/2 TBSP baking powder
1/4 TSP salt
2 TBSP butter
1/2 CUP water

CREAM SAUCE
2 TBSP butter
1 TBSP all-purpose flour
1/4 CUP milk
1/4 TSP salt
1/4 TSP garlic powder (Footehills Farm)

TOPINGS
2 medium golden beets
Olive oil
Salt
Black pepper
1/2 onion, thinly sliced
1/2 JAR marinated feta from Brush Creek Creamery
1 SPRIG rosemary, removed from stem
1/4 CUP chopped walnuts

 

PROCESS
1. Heat the oven to 400 F. Slice the beets and onion in thin rounds, place on a baking sheet, and toss with olive oil, salt and pepper. Bake for about 15 minutes until soft.

2. Meanwhile, make the pizza crust by mixing all the ingredients in a stand mixer with the hook attachment (or stir and knead by hand). Once the dough forms a ball, wrap in a reused plastic bag and place in the fridge for half an hour.

3. Next, make the cream sauce. In a small sauce pan, heat the butter until melted. Add the flour, whisking continually until the mixture thickens and starts to simmer. Add the milk, continuing to whisk until the sauce combines and thickens, about 5 minutes. Remove from heat and add the salt and garlic powder.

4. Roll out the pizza dough on a floured surface into a 12-14 inch round. Move onto a baking sheet, spread with cream sauce, and top with roasted beets, onions, feta, rosemary, and walnuts.

5. Increase the oven temperature to 500 F and bake for about 8 minutes until the crust is golden brown. Enjoy!
