INW HUMMUS

I N G R E D I E N T S

  • 1 CUP dried chickpeas (roughly 3 CUPS cooked) from Palouse Brand, soaked overnight 

  • 2 cloves garlic from Channing Farm

  • 2/3 CUP lemon juice

  • 1 CUP tahini

  • 2 TSP salt

  • 1/2 CUP water

  • ½ TSP ground cumin

  • 4 TBSP olive oil

PROCESS

  1. Simmer the soaked chickpeas for 3-4 hours until tender. Drain.

  2. Using a food processor, combine the garlic, lemon juice, tahini, salt, water, and cumin. Blend until smooth.

  3. Add the chickpeas and olive oil, blending again until smooth and creamy.

  4. Spread the hummus into a serving bowl. Drizzle with additional olive oil and cumin powder. Feast with the seasons!
