LEMONY PURPLE SPROUTING

BROCCOLI PASTA

A simple but delicious way to enjoy spring's first broccoli! Enjoy alongside the salad mix, used as a side salad and topped with a lemon and olive oil dressing.

 

I N G R E D I E N T S

  • 1/2 PACKAGE pasta

  • 1 yellow onion, halved and sliced into 1/4 inch strips

  • 2 CLOVES garlic, minced

  • 6 OZ mushrooms, quartered (or protein of choice)

  • 1 BUNCH purple sprouting broccoli, chopped with large stems removed

  • 2 TBSP butter

  • 1 lemon, squeezed

  • Salt and pepper, to taste

  • 1/2 BUNCH parsley, chopped (optional)

  • Parmesan Cheese, freshly grated (optional)

P R O C E S S

  1. Cook pasta according to directions on the package.

  2. Sautee onion with butter until translucent. Add the garlic and mushrooms, cooking until the mushrooms have released most of their liquid.

  3. Add the purple sprouting broccoli, cooking until tender. Add a squeeze of lemon and salt and pepper to taste.

  4. Serve with pasta and sprinkle with parsley and parmesan cheese. Enjoy!
