QUICK PICKLED WINTER VEGETABLES

I N G R E D I E N T S

  • ¼ POUND carrots

  • ¼ POUND hakurei turnips

  • ¼ POUND winte radishes

  • ¼ POUND other winter vegetables (more of the above or try adding in red onions or even leeks, beets, or kohlrabi!)

  • 1 TSP sugar

  • 1 PINCH salt

  • ¼ CUP white vinegar

  • ¼ CUP rice vinegar

  • 2 TBSP water

PROCESS

  1. Slice or grate the vegetables thinly.

  2. Place the vinegar, water, salt, and sugar in a large mason jar or tupperware container. Stir until the salt and sugar dissolve

  3. Add the vegetables. If they are not completely submerged in the vinegar, add more vinegar until covered.

  4. Let sit for at least 30 minutes and enjoy! Keep in the fridge for up to 3 weeks and enjoy on sandwiches, in tacos, or with a rice bowl!
