SAGE ROASTED DELICATA WITH BURRATA

1 delicata squash
1 TBSP sage
Microgreens
Pepitas
Burrata cheese
Olive oil
Salt and pepper
PROCESS
Preheat the oven to 400 degrees F.
Wash the delicata squash. Chop off the ends and slice the squash into 1/2 inch rounds. Remove the seeds from each slice using a knife or spoon.
Place on a baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, and sage. Toss to coat evenly.
Bake for roughly 20 minutes or until golden brown, flipping the squash about halfway through.
Plate and top with the burrata cheese, microgreens, and pepitas. Enjoy!
