APPLE

HAND PIES

I N G R E D I E N T S

PIE CRUST

  • 1 ¼ CUP flour

  • ½ TBSP sugar

  • ½ TSP salt

  • 1 STICK butter, cold

  • ⅓ CUP ice water

FILLING

  • 3 Apples, cored and diced into quarter inch pieces

  • ⅓ CUP sugar

  • 1 SQUEEZE lemon juice

  • 1 TBSP corn starch

  • 1 TBSP flour

  • 1 PINCH salt

P R O C E S S

  1. Prepare the pie crust: Add flour, sugar, and salt to a large mixing bowl. Cut in the butter using a pastry cutter until the chunks of butter are the size of small peas. Slowly add the ice water and stir in with a wooden spoon. Fold the dough over itself and press 2-3 times to form a rough ball and create layers that will become flaky crust. Pat the dough into a disc. Wrap the dough in plastic and refrigerate for half an hour.

  2. Preheat the oven to 375 F.

  3. Prepare the filling: Add the apples to a large mixing bowl. Stir together with remaining ingredients.

  4. Assemble and bake the hand pies: Roll out the dough into a large rectangle, about 12x18 inches. Cut the dough into 6, 6 inch squares.

    Add ⅓ cup of the filling to each square. Fold in the corners, pinching them together at the top and then down the seams. Place in a buttered 9x11 inch baking pan. Use a pastry brush to brush the dough with water or a whisked egg.

    Bake for 40 minutes until golden brown. Enjoy warm and top with vanilla ice cream or maple icing!
