Acorn squash this week is from the WSU Organic Farm. At the WSU Organic Farm, students are given the opportunity to practice and learn organic farming skills in an intensive, small-scale environment.
STORAGE PRO TIP
Unlike other winter squashes that can last up to six months when stored properly, acorn squash has a storage life of 4-6 weeks. Acorn squash like to be stored in a cool (50-55F), dry place with good ventilation.

One cup of acorn squash has 25% daily value of Vitamin C, 10% Vitamin B6, and 10%% Vitamin A.
ACORN SQUASH WITH CHILE-LIME VINAIGRETTE
My favorite way to eat acorn squash is with a chili-lime vinaigrette. These delicious squash wedges are perfect with tacos, black bean bowls, or as a snack! Recipe originally via smittenkitchen.com.
Roast ¾ inch slices of the acorn squash with olive oil, salt, and pepper for half an hour at 450F. Meanwhile, mash a clove of garlic with ¼ tsp salt in a small bowl. Add ¼ cup olive oil, 1 ½ Tbsp lemon juice, and 1 tsp chile pepper flakes. Transfer roasted squash to a platter and drizzle with the vinaigrette.
