GROWN AT BIG SAGE ORGANICS

That white cauliflower we know and love can also be grown in a vibrant purple, green, or light orange. Not to mention the coolest veg ever, romanesco cauliflower. It’s form is a natural approximation of a fractal!! Nature is so neat. Big Sage Organics, located in Washington’s Columbia Basin, grows many rare varieties of produce that never make it to the grocery store. We are glad that our LINC Box members can delight in them!

STORAGE PRO TIP

Cauliflower keeps best when stored in the fridge and wrapped loosely in a plastic bag. For this, reused plastic bags or Stasher Bags (reusable, non-plastic silicone bags) work great!

One cup of cauliflower has about 85% daily value of Vitamin C and 10% Vitamin B6.

CAULIFLOWER RICE

Cauliflower rice can be used in almost any dish that calls for rice, and is high in fiber and low in calories. Simply grate the cauliflower with a cheese grater or pulse in a food processor for 25 seconds. Once grated, enjoy raw or saute in a covered pan with olive oil for about five minutes.

Try cauliflower rice mixed with sauteed onions, garlic, mushrooms, and spinach, and cooked in vegetable broth!
