Sautéed Fava beans
Yield: Serves 2 to 4

LINC BOX INGREDIENTS
Fresh fava beans (about 1½ to 2 cups shelled beans)
1/4 cup loosely chopped basil (more or less depending on how much love you have for basil)
1/2 onion finely minced
PANTRY INGREDIENTS
2 tsp olive oil
Boiling water
Salt and pepper
DIRECTIONS:
1. Shell the beans from the fava pods.
2. In a bowl, combine ice and tap water to make ice water; set aside.
3. In a large saucepan, bring water to a boil and add a bit salt. Add the shelled beans to the boiling water and let cook for about 1-2 minutes.
4. Drain and immediately plunge the fava beans into ice water to stop the cooking. Let the beans cool and peel the outer skin from each of them.
5. Over medium heat in a large pan, add olive oil, then the minced onion and sauté for 5 minutes (or until onion is soft).
6. Add the peeled fava beans with a pinch of salt and pepper, sauté for about 5 minutes. Stir gently.
7. Finish with chopped basil, lightly working it in before serving.
Serving ideas:
This recipe works great as a side dish but it is amazing if you add some cooked bowtie pasta and finish with parmesan cheese. Feel free to add some other ingredients like prosciutto and grated hard cheeses to add a little more flavor and make a more substantial side dish. Other herbs work well in this too, such as rosemary and thyme.
