Green Garlic - Channing Farm, Twisp, WA - Green garlic, or spring garlic, is the young garlic plant which can be eaten in its entirety, from bulb to leaves. Use it in place of garlic cloves, scallions, or leeks. Slice thinly and include in potato salad, dressings, stir fry, or soup.

White Cauliflower - Big Sage Organics, Othello, WA - Cauliflower has a mild and slightly nutty flavor. Cauliflower is a great dipper for veggie trays, a mellow addition to curries, and a fit for a feast when roasted whole.

Imperfect Yellow Summer Squash - Big Sage Organics, Othello, WA - The epitome of summer! The flavor of this gorgeous and bright yellow zucchini is much the same as green zucchini, though perhaps a tad sweeter. Its mild, delicate flavor makes it a great option for zucchini noodles as a replacement for pasta, a Zucchini and Ricotta Galette, Zucchini Black Bean Soup, or Chili-Lime Zucchini Quesadillas. These zucchini have a slightly curved neck, making them “imperfect.”

Green or Red Kale - Big Sage Organics, Othello, WA or Welcome Table Farm, Walla Walla, WA - Kale is a tasty and nutritious green with a earthy and bittersweet flavor. It has high levels of fiber, antioxidants, calcium, vitamins C and K, and iron. Massaging or cooking these greens breaks down their texture, making them sweeter and easier to digest. Kale is choice for a hearty salad, kale chips, smoothies or soup.

Salvanova or Butterhead Lettuce - Hayshaker Farm, Walla Walla, WA - There’s nothing better than the smooth, buttery flavor and texture of butterhead lettuce on a hot summer day. The large and pliable leaves can be used for lettuce wraps, or cut into bitesize pieces for a classic and hydrating salad.

Mediterranean Cucumbers - Elithorp Farm, Deer Park, WA - These small and mild cucumbers have a thin skin which makes them a great option for snacking, sandwiches, or salads. Mediterranean cucumbers are on the crisper and less watery side of the cucumber spectrum! They’re an early variety in the spring, making one of the first cucumbers to enjoy.

OR Fresh Yellow Onions - Lilac City Farm, Spokane Valley, WA - Use both the bulb and greens of these fresh onions that haven’t been dried or cured. Fresh onions have a a sweeter and milder flavor than storage onions, making them a great candidate for salads or grilling.
