Week of June 12th

LINC BOX - Tuesday

half share + base share + large share

Asparagus - Royal Produce, Royal City, WA - Enjoy fresh spring asparagus during its short window of availability! Asparagus is one of those hyper-seasonal items but we'll have these tender, green shoots around for through the end of May - soak in this beautiful sign of spring while you can!

Microgreen Mix - Full Bushel Farm, Medical Lake, WA - Some of our first spring greens! We've been counting down the days to toss one of these in a fresh, veggie-packed salad... yumm!

Green Garlic - Channing Farm, Twisp, WA - The first of the spring herbs! Green or spring garlic is young garlic that can be eaten in its entirety, from bulb to leaves. Use it in place of garlic scallions or leeks. Chop into small pieces and include in potato salad, dressings, stir fry, or soup. Add fresh garlic-like flavor to your eggs, baked potatoes, pasta sauce, or cracker dip.

Mixed Summer Squash - Welcome Table Farm, Walla Walla, WA - Green zucchini is so summer and versatile. The flavor of this gorgeous yellow zucchini is much the same as green zucchini, although some say it's sweeter.   Because of their mild, delicate flavor, try making zucchini noodles as a replacement for pasta, cheesy zucchini quesadillas, or combining it with your garden zucchini to make this zucchini bread!

Spring Onions - Royal Produce, Royal City, WA - Fresh spring onions with their green tops! Beautiful and even the outer layers are edible. These onions are not cured so store them in the fridge!

Radish Bunches - Lilac City Harvest, Veradale, WA - Fresh bulk radishes! Try the simple snack of sliced radishes with butter and salt! We also enjoy pickling these fresh radishes for tacos, or Bahn Mi.

Yellow Potatoes - Channing Farm, Twisp, WA - The most versatile of potatoes. Try our Smashed Potato LINC Box Recipe... the perfect side for your next night of grilling!
