Pea Shoots - Full Bushel Farm, Medical Lake, WA - Pea shoots—also known as pea sprouts—are the young leaves and stem of traditional garden pea plants. While a pea plant can take 60-70 days to mature, pea shoots are harvested after just 2-4 weeks. They are very young and tender, with a distinctive, sweet pea flavor. Spinach - Welcome Table Farm, Walla Walla, WA - Raw spinach has a mild, slightly sweet taste that can be refreshing in salads, while its flavor becomes more acidic and robust when it is cooked. Rainbow Carrots - Elithorp Farm, Deer Park, WA - These rainbow carrots are a mix of varieties picked at their immature stages for young harvest. These varieties make for a perfect array of tender-crisp, sweet and earthy carrots.

Roma Tomatoes - Royal Produce, Royal City, WA - Their bright red, smooth skin, high sugar and acid levels, and low moisture content compared to other tomato varieties, Roma tomatoes are ideal for cooking down into a tomato sauce or paste. Unlike beefsteak tomatoes, Roma tomatoes are not as juicy or as sweet which is why they're more commonly cooked than eaten raw. However, they taste delicious in salads and even in sandwiches!
