AVOCADO KALE SALAD
I N G R E D I E N T S
1 bunch kale, stripped from its stem and sliced into bite sized pieces
1/2 TSP salt
1/2 lemon, squeezed
1 drizzle olive oil
2 radishes or carrots, sliced into thin rounds
1 stalk green garlic, sliced thinly
1 avocado, cut into 1/4 inch pieces
P R O C E S S
Place the kale, salt, olive oil, and lemon juice in a large bowl. Massage roughly 10 times with your hands. This helps to make the kale tender, easy to digest, and delicious!
Add the radishes, green garlic, and avocado. Stir until combined and the avocado starts to break down a bit and coat the kale. Enjoy!
