RICE NOODLE BOWL WITH LEMON-TAHINI DRESSING
I N G R E D I E N T S
1/2 PACKAGE rice noodles, cooked according to directions on the package
2 carrots, chopped into bite-sized pieces
2 radishes, sliced thinly
1/2 PACKAGE microgreens
2 TBSP tahini
1/2 lemon, squeezed
1 TBSP olive oil
1 TBSP water
Salt, to taste
P R O C E S S
Cook the rice noodles according to directions on the package.
Chop veggies.
Whisk together the tahini, lemon, olive oil, water, and salt. Add more water if needed for a dressing-like consistency.
Gather noodles and veggies into your bowl and top with the lemon-tahini dressing. Enjoy!
