RICE NOODLE BOWL WITH LEMON-TAHINI DRESSING

A fresh and tasty dish, perfect for a quick lunch on the front stoop!

 

I N G R E D I E N T S

  • 1/2 PACKAGE rice noodles, cooked according to directions on the package

  • 2 carrots, chopped into bite-sized pieces

  • 2 radishes, sliced thinly

  • 1/2 PACKAGE microgreens

  • 2 TBSP tahini

  • 1/2 lemon, squeezed

  • 1 TBSP olive oil

  • 1 TBSP water

  • Salt, to taste

P R O C E S S

  1. Cook the rice noodles according to directions on the package.

  2. Chop veggies.

  3. Whisk together the tahini, lemon, olive oil, water, and salt. Add more water if needed for a dressing-like consistency.

  4. Gather noodles and veggies into your bowl and top with the lemon-tahini dressing. Enjoy!
