CHIMICHURRI

Chimichurri is a simple but delicious garlicy herb sauce used for grilling beef and chicken in Argentina. It can also be drizzled on roasted vegetables, warm bread, or a grain or bean salad. When roasting or grilling, this sauce is best applied just minutes before the roast is done, adding flavor and moisture but not burning.

I N G R E D I E N T S

1 BUNCH herbs (We’ve used parsley or a mix of oregano, thyme, and chives. Chimichurri is traditionally made with parsley and oregano.)

1 CLOVE garlic

1/2 TSP chili flakes

1/2 CUP olive oil

2 TBSP red wine vinegar

1/2 TSP salt

1/4 TSP black pepper

 

PROCESS

  1. Remove the herb stems and chop the greenery finely. Finely chop the garlic.

  2. Measure all ingredients into a small bowl and let them marinate for at least five minutes.

  3. Enjoy!
