KALE SALAD WITH BALSAMIC SHALLOT VINAIGRETTE

 

I N G R E D I E N T S

  • 1 BUNCH kale from Big Sage Organics, sliced thinly

  • ½ POUND shallots from Elithorp Farm, sliced thinly

  • ¼ CUP olive oil

  • Salt and pepper

  • ¼ CUP balsamic vinegar

  • 1 TSP maple syrup

  • ¼ CUP walnuts from Ray Family Farms, hulls removed and chopped

P R O C E S S

  1. Heat olive oil in a skillet over medium-low heat. Add the shallots and cook, stirring occasionally, until they soften, about 15 minutes. Add the salt and pepper, balsamic vinegar, and maple syrup, stirring for another couple minutes until the dressing thickens slightly. Remove from heat.

  2. Place the kale in a serving bowl. Drizzle with vinaigrette and toss. Sprinkle with walnuts. Feast with the seasons!
