STACKED CABBAGE WITH HERBED MISO DRESSING

1 cabbage
1 TBSP miso paste
1/2 CUP olive oil
2 TBSP parsley and/or mint, chopped finely
1 TSP ground ginger
1 TSP salt
Pepper
1 lemon, juiced
PROCESS
Preheat the oven to 400 degrees F. Slice the cabbage into ~1 inch thick rounds with the core in the middle. Place on a baking sheet and brush with olive oil. Roast for about 10 minutes until slightly browned and tender.
Meanwhile, place the rest of the olive oil, miso paste, parsley and/or mint, ginger, salt, and pepper in a small bowl and whisk to incorporate. Add the lemon juice and stir.
Stack the cabbage, one round on to of the next, making a mound. Drizzle with dressing. Slice into the mound with a large knife like you would cut into a pie. Serve with rice or grains and enjoy!
