CHILI-LIME

ACORN SQUASH

Serves 3-6

 

I N G R E D I E N T S

  • 1 acorn squash from Ronnigers Organics

  • ½ TSP salt

  • 2 small garlic cloves, chopped

  • ¼ CUP olive oil

  • Juice of ½ lime

  • Chili flakes from Hayshaker Farm

P R O C E S S

  1. Preheat the oven to 400 degrees F. Slice the acorn squash in half and remove the seeds. Slice into 1-inch slices. Place on a baking sheet. Toss with a drizzle of olive oil and sprinkle of salt. Bake for 20 minutes until golden brown, flipping halfway through.

  2. Meanwhile, place the salt and garlic in a small bowl. Using a spoon, mash the garlic against the salt to create a rough paste. Whisk in the olive oil, lime and chili flakes.

  3. In a serving bowl, toss the acorn squash with dressing. Enjoy!
