ROASTED CHILI-LIME ACORN SQUASH

1 acorn squash from Ronnigers Organics
½ TSP salt
2 small garlic cloves, chopped
¼ CUP olive oil
Juice of ½ lime
Chili flakes from Hayshaker Farm
P R O C E S S
Preheat the oven to 400 degrees F. Slice the acorn squash in half and remove the seeds. Slice into 1-inch slices. Place on a baking sheet. Toss with a drizzle of olive oil and sprinkle of salt. Bake for 20 minutes until golden brown, flipping halfway through.
Meanwhile, place the salt and garlic in a small bowl. Using a spoon, mash the garlic against the salt to create a rough paste. Whisk in the olive oil, lime and chili flakes.
In a serving bowl, toss the acorn squash with dressing. Enjoy!
