LINC Box Recipe - Cabbage Salad

We’ve been sending you plentiful amounts of cabbage this winter so we thought we’d share our favorite cabbage recipe. We love this easy and versatile salad recipe that was passed along by a friend! Eat it as a salad, toss it on a pizza crust for a Thai peanut pizza, or serve it on rice noodles with cripy tofu.

Ingredients

Salad

7 cups thinly sliced red and/or green cabbage
2 large red bell peppers, cut into matchsticks
8 large green onions (or one leek), sliced

Dressing

6 Tbsp rice vinegar
6 Tbsp canola oil
5 Tbsp creamy peanut butter
1 1/2 Tbsp minced garlic
3 Tbsp soy sauce
3 Tbsp brown sugar
2 Tbsp minced ginger

Process

Toss the salad ingredients in a large bowl. Wisk together the dressing ingredients in a small bowl. Pour the dressing over the salad mixture, stir, and enjoy!
