LINC BOX - Tuesday

half share + base share + large share

Yellow Peaches - OPMA (okanagan producers marketing association), Okanogan, WA - Take a juicy bite out of these delicious peaches!! Leave these peaches on the counter until they're ripe - the top of the peach near the stem should give a bit when it's perfectly ready.

Purple and Green Bell Peppers - Full Bushel Farm, Medical Lake, WA - The first peppers of the season with their pleasant bite of crisp bitterness! These peppers can be chopped thinly into a fresh pico de gallo or sauteed for fajitas!

Cucumbers - Full Bushel Farm, Medical Lake, WA - My favorite veggie.... the possibilities are endless with this one. Quick pickle to top any dish, toss with tomatoes, basil, and feta topped with olive oil and a balsamic reduction, or add it to a fresh, summer quinoa salad!

Eggplant - Big Sage Organics, Othello, WA - These pretty purples make a great baba ganoush or pair well with zucchini to top a white wine pasta dish!

Rainbow Carrots - Elithorp Farm, Deer Park, WA - These rainbow carrots are a mix of varieties picked at their immature stages for young harvest. These varieties make for a perfect array of tender-crisp, sweet and earthy carrots.

Bi Color Sweet Corn - Big Sage Organics, Othello, WA - Nothing says summer like fresh corn on the cob! Grill to make elotes (Mexican street corn) or boil and spread with butter and salt.

Purple + White Daikon Radishes - Full Bushel Farm, Medical Lake, WA - Add a vibrant and crunchy mix of violet purple and white radishes to salads, tacos, slaws, or sandwiches! These long roots are a great source of fiber and vitamin C.
