Tatsoi or Yu Choi - Hayshaker Farm, Walla Walla, WA - Tatsoi is a long and slender, crunchy green. It has sweet stems and tender leaves, similar to bok choi but smaller. Yu choi is very sweet and tender. Its stems are a vibrant bright green and it’s usually harvested as the first few buds are opening. Both are excellent in stir-fries, steamed, or in soups.

Swiss chard has a similar flavor to spinach or beet greens; try it sauteed with garlic and lemon, or try pairing it with mushrooms, ricotta cheese, and herbs in a galette!
