Mediterranean Cucumbers - Elithorp Farm, Deer Park, WA and The Corner Farm, Spokane, WA - These small and mild cucumbers have a thin skin which makes them a great option for snacking, sandwiches, or salads. Mediterranean cucumbers are on the crisper and less watery side of the cucumber spectrum! They’re an early variety in the spring, making one of the first cucumbers to enjoy.
Italian Eggplant - Frog Hallow Farm, Walla Walla, WA and Royal Produce, Royal City, WA - These pretty purples are tender, mild, and sweet with a light bitterness. Before they're cooked they have a spongy texture that absorbs the flavors of whatever they're cooked with, but after cooking they become soft and creamy. Make the classic eggplant parmesan, grill them to enjoy with pasta, or roast and blend for baba gahnoush.

Rainbow Bell Peppers - Frog Hallow, Walla Walla, WA - Red, yellow, orange, green, and purple peppers! We love a bell pepper on a veggie tray, on pizza, in ratatouille or in fajitas.
