Watermelon Radishes - Griffin Creek Farm, Mt. Vernon, WA - We love that these heirloom radishes bring so much color to cold days. The lower soil temperatures of fall and winter often soften their peppery spice and bring out an otherwise hidden sweetness. For a fresh and bright radish salad, try using a carrot peeler to make thin radish slices. Add a touch of apple cider vinegar, marinated feta from Brush Creek Creamery, walnuts, and a pinch of salt. Mmm!

Red Cabbage - Ronnigers Organics, Moyie Springs, ID - Red cabbage is more bold, floral, and peppery than it's green counterpart. Its waxy texture gives it a satisfying crunch in slaws or stirfrys. Try quick pickling it for a tangy condiment to put on everything!

Red Beets - Hayshaker Farm, Walla Walla, WA - The classic red beet that oozes earthy, sweet, and floral flavors. Try roasting as a side or grating fresh as a sandwich topper. Pairs well with lemon, parsley, thyme, black pepper, or spring greens.

Shallots - Swiss Farm, Omak, WA - Shallots taste similar to peppery red onions with a hint of garlic. They’re prized for their delicate flavor and ability to caramelize down into a melty texture.

Red Lady Potatoes - Ronnigers Organics, Moyie Springs, ID - The red potato is ideal for stews, potato salads, and roasts! It's firm and waxy texture helps it to hold it's shape so it doesn't fall apart when cooked.

Rosalba or Varieagated Chioggia Radicchio - The Crow’s Farm, Mt. Vernon, WA - The Winter Rose! Rosalba has a crisp and sweet flavor and makes an incredibly beautiful, pink salad. It's known for being less bitter than other radicchio varieties. Enjoy raw to maintain it's lovely rose pink hue!
