Golden Sunrise Beets - Hayshaker Farm, Walla Walla, WA - Yellow sunrise variety of beets is especially sweet and delicious with a vibrant inside!

Crimson Delight Apples - Tonnemaker Hill Farm, Royal City, WA - Not yet widely available, Crimson Delight is a newly developed all-purpose apple. Its sweetness and crisp texture make for a great snacking and baking apple.

Mini Spaghetti Squash - The Crow’s Farm, Mt. Vernon, WA - Spaghetti squash is best known for its unique flesh that separates into long, translucent strings that resemble angel hair pasta! When cooked, the texture of the squash is tender with a slight crunch and offers a very mild flavor.

Imperfect Carrots - Hopewell Farm, Everson, WA - Some small blemishes or irregularities on a swee and crunchy classic. This root is a staple snack or a much-loved addition to salads and stews. Feature the flavor of carrots by roasting them with garlic and parmesan or sautéing with sage.

Green Cabbage - Ronnigers Organics, Moyie Springs, ID - Crunchy cabbage for slaws, roasts, and sautees. Green cabbage has a mild and gentle flavor relative to its red counterpart.

Shallots - Swiss Farm, Omak, WA - Shallots taste similar to peppery red onions with a hint of garlic. They’re prized for their delicate flavor and ability to caramelize down into a melty texture.

Yellow Potatoes - Swiss Farms, Omak, WA - Yellow potatoes have smooth skin and are slightly waxy which helps them to keep their shape. Their firm texture makes them great for grilling, baking, or roasting. This variety has an exceptional buttery and rich flavor!
