Asparagus - Royal Produce, Royal City, WA - Enjoy fresh spring asparagus during its short window of availability! Asparagus is one of those hyper-seasonal items but we'll have these tender, green shoots around for through the end of May - soak in this beautiful sign of spring while you can!

Lacinato “Dinosaur” Kale - Big Sage Organics, Othello, WA - Lacinato kale has a slightly rougher texture than other kale, and is best when cooked or sliced into thin strips and massaged. A favorite for kale chips, soups, and sautés.

Spinach - Ralph’s Greenhouse, Mt. Vernon, WA - Spinach is a nutrient rich green that has a sweet flavor with a hint of bitterness. Pair this crisp green with nuts and fruits for a flavorful and fresh salad. Eat spinach cooked to be able to absorb more of its iron and calcium - we love it on pizza, in soups, in curries, or in smoothies.

Baby Broccoli or Broccolini - Hayshaker Farm, Walla Walla, WA and Griffin Creek Farm, Snoqualmie Valley, WA - Broccoli is crunchy with a mild bitterness when raw and sweeter when cooked. Broccoli cheddar soup, broccoli curry, and pasta with roasted broccoli are some of our favorite ways to use these versatile little trees! Pair with strong flavors like garlic, lemon, chili, or sesame.

Salad Mix or Red Butterhead Lettuce - Lilac City Harvest, Spokane Valley, WA and Dogwild Farm, Spokane, WA - This green and red lettuce makes your side salads come together in a flash. Just rinse these greens and you have the ultimate salad base! Add sprinklings of nuts, fruits, carrots, or cucumbers and drizzle on your favorite dressing for a flavorful and hydrating side.

Mixed Summer Squash - Big Sage Organics, Othello, WA - A favorite of summer! This mix includes green zucchini, yellow zucchini, zephyr squash (green+ yellow) and patty pan (squat little guys). Try Chickpeas with Patty Pan and Herby Dressing and this Summer Squash and Chickpea Salad.

OR Mediterranean Cucumbers - Elithorp Farm, Deer Park, WA - These small and mild cucumbers have a thin skin which makes them a great option for snacking, sandwiches, or salads. Mediterranean cucumbers are on the crisper and less watery side of the cucumber spectrum! They’re an early variety in the spring, making one of the first cucumbers to enjoy.
