Strawberries - Tonnemaker Hill Farm, Royal City, WA - Benson strawberries are a "desert" variety - they are smaller and the flavor is more concentrated than those grown in wetter climates. These are early-season strawberries, available in June and July!

Rainbow or Red Radishes - Ralph’s Greenhouse, Mt. Vernon, WA and Sweet Mercy Farm, Spokane, WA - Try sliced radishes with butter and salt! We also enjoy pickling these fresh radishes for tacos or this Tofu Banh Mi recipe.

Romaine or Green Lettuce - Full Bushel Farm, Medical Lake, WA and Lilac City Harvest, Spokane Valley, WA - Romaine lettuce has a delightfully crisp texture which makes for a refreshing salad. Its sturdiness allows for romaine to be roasted, grilled, used in stir-fry, or used as a gluten free option for wraps!

Hakurei Salad Turnips - Hayshaker Farm, Walla Walla, WA - Hakurei, or Japanese salad turnips, are sweet and crisp when raw or buttery and smooth when cooked. Add them to a salad like radishes or roast them with miso and ginger!

Red Kale - Big Sage Organics, Othello, WA - Kale is a tasty and nutritious green with a earthy and bittersweet flavor. It has high levels of fiber, antioxidants, calcium, vitamins C and K, and iron. Massaging or cooking these greens breaks down their texture, making them sweeter and easier to digest. Kale is choice for a hearty salad, kale chips, smoothies or soup.

Asparagus - Royal Produce, Royal City, WA - Enjoy fresh spring asparagus during its short window of availability! Asparagus is one of those hyper-seasonal items but we'll have these tender, green shoots around for through the end of May - soak in this beautiful sign of spring while you can!

OR Mediterranean Cucumbers - Elithorp Farm, Deer Park, WA - These small and mild cucumbers have a thin skin which makes them a great option for snacking, sandwiches, or salads. Mediterranean cucumbers are on the crisper and less watery side of the cucumber spectrum! They’re an early variety in the spring, making one of the first cucumbers to enjoy.
