Spinach - Ralph’s Greenhouse, Mt. Vernon, WA and Boldly Grown Farm, Bow, WA - Spinach is a nutrient rich green that has a sweet flavor with a hint of bitterness. Pair this crisp green with nuts and fruits for a flavorful and fresh salad. Eat spinach cooked to be able to absorb more of its iron and calcium - we love it on pizza, in soups, in curries, or in smoothies.
Asparagus - Royal Produce, Royal City, WA - Enjoy fresh spring asparagus during its short window of availability! Asparagus is one of those hyper-seasonal items but we'll have these tender, green shoots around for through the end of May - soak in this beautiful sign of spring while you can!
Red Radishes - Ralph’s Greenhouse, Mt. Vernon, WA and Cabrera Farm, Burlington, WA - Try sliced radishes with butter and salt! We also enjoy pickling these fresh radishes for tacos or this Tofu Banh Mi recipe.
Little Gem Lettuce - Full Bushel Farm, Medical Lake, WA - A cute and small variety of green romaine lettuce, perfect for 1-2 servings of one of the best tasting lettuce salads. Little Gem Lettuce is more heat tolerant than other lettuces, making it perfect for growing the hot days of summer!
Lacinato Kale - Full Bushel Farm, Medical Lake, WA and Ralph’s Greenhouse, Mt. Vernon, WA - Lacinato kale has a slightly rougher texture than other kale, and is best when cooked or sliced into thin strips and massaged. A favorite for kale chips, soups, and sautés.
OR Chard - Full Bushel Farm, Medical Lake, WA - Swiss chard, or rainbow chard, is a leafy green often found in salad mixes. Try it sauteed with garlic and lemon or layer it into a galette!
OR Mizuna - Boldly Grown Farm, Bow, WA - This green great sauteed or raw as a salad base - you'll often find it as a part of salad mixes! It is a mild and slightly sweet variety of mustard greens.
Parsley - Cabrera Farm, Burlington, WA - It's flavor may be subtle but this nutrient-rich herb is a mainstay in the kitchen! Use in a chimichurri, or top on a fresh summer quinoa salad! Try this Spring Onion + Lentil Salad, Fresh Gazpacho, or Late Summer Couscous Salad!

OR Mediteranean Cucumbers - Elithorp Farm, Deer Park, WA - These small and mild cucumbers have a thin skin which makes them a great option for snacking, sandwiches, or salads. Mediterranean cucumbers are on the crisper and less watery side of the cucumber spectrum! They’re an early variety in the spring, making one of the first cucumbers to enjoy.

ARTISAN CHEESE | marinated labneh - brush creek creamery, deary, id - To create this award-winning Mediterranean soft cheese, we make yogurt with pasteurized cows milk and drain it through cheesecloth until it is thick, . We then spice it with fresh garlic, parsley and salt. We shape it in balls and drop it in olive oil with peppercorns, fresh herbs and dried red pepper for garnish.
