LINC BOX - Tuesday

half share + base share + large share

Asparagus - Royal Produce, Royal City, WA - Enjoy fresh spring asparagus during its short window of availability! Asparagus is one of those hyper-seasonal items but we'll have these tender, green shoots around for through the end of May - soak in this beautiful sign of spring while you can!

Hakurei Turnips - Full Bushel Farm, Medical Lake, WA - Hakurei, or Japanese salad turnips, are sweet and crisp when raw or buttery and smooth when cooked. Add them to a salad like radishes or roast them with miso and ginger!

Savoy Cabbage - Hedlin Farms, La Conner, WA - This cabbage is heavily textured, with ruffled edges and deep ridges that span across the leaves. It has a mild, sweet flavor with less of the peppery flavor associated with green and red cabbage. Savoy cabbage can be prepared in so many different ways- you can sauté it, bake it, fry it, grill it, add it to soups and stews, or make it into a delicious salad!

Salad Mix - Full Bushel Farm, Medical Lake, WA - Some of our first spring greens! We've been counting down the days to toss one of these in a fresh, veggie-packed salad... yumm!

Yellow Onions - Andersen Organics, Othello, WA - A pantry staple. Saute with olive oil on low heat to caramelize. Mmmm. These yellow storage onions should keep for months when stored properly.

Leeks - Ralph’s Greenhouse, Mount Vernon, WA - Leeks are great in quiche, pasta sauce, or as an onion substitute in any recipe. You can caramelize it as a side or add it to potato leek soup or stir fry! Try our Red Lentil Soup with Crispy Leeks LINC Box Recipe!

or Arugula - Hayshaker Farm, Walla Walla, WA - The delicious bitter taste of arugula, in microgreens! Add them to pasta, sandwiches, or hamburgers.

or White Radishes - Cabrera Farms, Burlington, WA - Try these pretty white radishes with butter and salt for a naked snack! We also enjoy pickling these fresh radishes for tacos or banh mi.

or Spinach Bunches - Welcome Table Farm, Walla Walla, WA - Spinach can be tricky to grow in the Inland Northwest as it will bold quickly in the heat of the summer. Enjoy this first spring harvest of this iron-rich green!

or Rhubarb - Corner Farm, Spokane, WA - It's time for the annual strawberry rhubarb pie, rhubarb muffins, or LINC Box Recipe's Rhubarb Shrub! The nostalgic bright pink, puckery stalk is here!
