Mixed Bell Peppers - Frog Hollow, Walla Walla WA - Red and purple peppers! We love a bell pepper on a veggie tray, on pizza, in ratatouille or in fajitas.
Beefsteak Tomatoes - Royal Produce, Royal City, WA - Beefsteak tomatoes are one of the largest tomatoes and have beautiful scalloped ridges. Use big slices of these tomatoes in sandwiches or herbed tomato salad, or preserve them for soups and sauces in the winter!
Delicata Winter Squash - Ronnigers Organics, Moyie Springs, ID - Delicata is one of the easiest winter squashes to prepare because of it's approachable size and edible skin. Slice this squash widthwise to create rounds with naturally scalloped edges.
Delicata has a nutty flavor and velvety texture, reminiscent of butternut or sweet potatoes. Try it roasted with herbs and burrata or as part of your next soup.
Hakurei Turnips - Hayshaker Farm, Walla Walla, WA - Hakurei, or Japanese salad turnips, are sweet and crisp when raw or buttery and smooth when cooked. Add them to a salad like radishes or roast them with miso and ginger!
Collard Greens - Hayshaker Farm, Walla Walla, WA - Try slow roasting these greens with ham hocks for a southern classic, or sauté with tomatoes, chickpeas, and lemon for a fresh twist!
Banana Fingerling Potatoes - Royal Produce, Royal City, WA - These small, long potatoes are perfect for roasting. This heirloom variety is fluffy, nutty, and buttery when cooked!
